I found this recipe on The Food Network nearly 12 years ago and have been making it ever since.I love bacon and I usually don’t make green beans without it, because, well, bacon and green beans are a super duo!
After the last time I made this recipe, I thought it needed an extra zing so I added a mustard balsamic sauce and now this delicious side dish is even better. The brown sugar in the sauce works well with the mustard and balsamic and when paired with the bacon the flavors come alive and are well-balanced and delicious.

The Ingredients
For the Beans and Bacon
- 1 lb green beans, fresh
- 6 slices bacon, you may want more see note in instructions below
- 1 tsp Kosher salt
For the Sauce
- 1/4 cup sunflower oil, or olive oil
- 1/4 cup Dijon mustard
- 2 tbsp light brown sugar, packed
- 2 tbsp balsamic vinegar
- 2 cloves garlic, minced
- Kosher salt and pepper to taste
The Process
Mise en Place
- Gather your ingredients. Preheat your oven to 350 degrees. Mince garlic and measure sauce ingredients into prep bowls.
Prepare the Green Beans
- Bring a medium saucepan 3/4 full of water to a boil. Add a teaspoon of kosher salt. Snap the ends off the green beans and put in a bowl. When the water is boiling, slowly add the green beans and cook for 3-5 minutes. Remove from the water with a slotted spoon or spider strainer spoon to a bowl.
Prepare the Bacon
- It is your choice, how much bacon you wrap around the bundles of beans. I use our homemade bacon and it is fairly wide so I slice it vertically, then again in half and wrap the bundle. You can use a full strip of bacon for each bundle, a half, or less. The amount of bacon you use may be more or less than stated in the ingredients section.
- In a skillet, cook the bacon until it starts to brown on one side slightly. Remove from pan to paper towels to drain and cool. Slice the bacon long-ways or leave whole depending on how you want to wrap your beans.
Make the Sauce
- While the bacon is booking, add the sunflower oil, Dijon mustard, brown sugar, balsamic vinegar, and minced garlic to a small bowl and whisk to combine. Season with kosher salt and pepper to taste.
Wrap the Beans
- Gather about 5-7 green beans into a bundle and wrap the bacon around the bundle. Place on a sheet pan with the open end of the bacon facing down. Continue until you have no beans left.
- Make sure to leave some room around each bundle when placing them on the baking sheet. The bundles need space to "breathe."
- Brush sauce on each bundle, covering the top of the bundle nicely. Use as much or as little sauce as you like.
Bake and Enjoy
- Place sheet pan with green bean bundles in the oven and bake at 350 degrees for 15 or until the bacon is rendered and crisp.
- Serve with meatloaf, chicken, and just about any meat dish, or eat as a snack!
