The Ingredients
- 3 artichokes, sliced in half
- 2 cups chicken stock, or vegetable stock
- 3 cloves garlic, peeled
- 2 lemons, quartered
- 1 bay leaf, dried
- 1 tsp onion powder
- 1 tsp garlic powder
- 1/2 tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper
The Process
Mise en Place
- Using a serrated knife, slice the artichokes in half lengthwise. Trim any loose leaves.
- Quarter the lemons, and peel the garlic. Measure the spices into a small bowl and mix to combine. Measure the stock.
Into the Instant Pot
- Place the artichokes into the Instant Pot, arranging the halves sideways to fit. Add the chicken stock, lemons, garlic, and bay leaf to the pot.
- Set the Instant Pot to high pressure and set the timer for 15 minutes.
- When the artichokes are done, DO NOT manually release the pressure. Let sit for 10 minutes so that most of the pressure releases on its own. Then, release the remaining pressure and remove the lid.
Gilling the Artichokes
- Heat your grill to medium-high.
- Remove the "fuzzy" or "hairy" part of the artichoke, being careful not to remove the heart. Sprinkle the spice blend on top of each artichoke. Grill for 3 to 5 minutes.
- Remove from the grill and enjoy with your favorite dipping sauce.
